Crunchy, Flavorful Oven-Fried Chicken

Serves: 4


1/2 cup milk, organic, coconut or almond
1 tablespoon Dijon mustard
2 garlic cloves, minced
1 teaspoon hot sauce
2 1/2-3 pounds chicken thighs and drumsticks from free range chickens
1/2 cup flour, whole-wheat
2 tablespoons sesame seeds
1 1/2 teaspoons paprika
1 teaspoon dried thyme
1 teaspoon baking powder
1/8 teaspoon salt
Freshly ground pepper, to taste
extra virgin olive oil cooking spray


In a shallow glass bowl or dish, mix buttermilk, mustard, garlic and hot sauce with a whisk. Blend well. Dip chicken, turning to coat both sides on each piece.

Cover bowl or dish and let marinate in the refrigerator for anywhere from 30 minutes to up to 8 hours. Set oven to 425 degrees Fahrenheit and preheat.

Set a wire rack on a baking or cookie sheet and coat it with cooking spray after lining it first with aluminum foil.
In another small bowl, mix the flour, sesame seeds, paprika, thyme, baking powder, salt and pepper with a whisk.
Get a large sealable plastic bag or big paper one and pour in the flour.

After shaking excess marinade off of chicken, place one or two pieces at a time in the bag, shaking to coat evenly.
Shake off any excess flour and place the chicken on the prepared rack, discarding any leftover flour mixture and marinade.

Top chicken pieces with a coating of cooking spray. Place chicken in oven and cook for 40 to 50 minutes or until chicken is golden brown and no longer pink in the center.
