Phyllo Wrapped Asparagus

Here’s a yummy and crunchy way to dress up some asparagus. This is a basic recipe, but you could certainly add things like Parmesan cheese and a variety of seasonings. Serve with a hot or cold dip, the options are endless. I whipped up some hot cheese sauce and it was delicious.


12 asparagus spears
Olive oil
3 sheets phyllo dough


Preheat oven to 375 F.

Start by lightly steaming the asparagus for a couple minutes. You want it to be a bit soft, but not fully cooked. Let them cool.

Now you’re ready to wrap the asparagus. A 1/4 sheet of phyllo is enough to wrap an asparagus spear, so start by dividing your first sheet into 4 pieces. Take one of those pieces, fold it in half, brush the top with a bit of olive oil and then place the asparagus spear near the bottom of the sheet. Roll it up and place on a greased baking sheet, fold side down.

Repeat with the remaining 3 quarters sheets. Then do the same with the remaining 2 full sheets.

Once all your spears are on the baking sheet, brush the tops lightly with olive oil. Bake for about 15-17 minutes, or until the phyllo has lightly browned.


Serve with a warm or cold dip. Cheese sauce is a perfect complement.
