Children’s Favorite Lamb and Bean Casserole

½ lb lean lamb, diced
1 clove of garlic, minced
1 small onion, chopped
1 carrot, sliced
1 celery stick, finely sliced
10 oz canned mixed beans, drained
2 cups chicken stock (ideally unsalted)
14 oz diced tomatoes
Fresh parsley, chopped
Splash of olive oil

Heat the olive oil in a skillet and gently fry the garlic, onion, carrot and celery until onion is tender. Add the diced lamb, stock and tomatoes and bring the mixture to a boil. Reduce heat immediately, cover and simmer for about one hour. Add the beans and keep on simmering until the meat is tender. Sprinkle with parsley.

Serve immediately with rice or roasted potatoes.
