(you need an ice-cream maker)
1 ½ cups water
¾ cups fresh lime juice
¾ cups fresh lemon juice
½ tbsp lime zest
½ tbsp lemon zest
1 cup granulated sugar (or more if you like it sweeter)
Basil leaves, torn
Combine the granulated sugar and water in a saucepan. Slowly bring to a boil and immediately reduce the heat. Allow to simmer until the sugar is dissolved (without stirring). Remove from heat and add the lemon and lime zest. Set aside for about 15-30 minutes to cool. Strain the pulp from the lemon and lime juice. Then add the juices and a sprinkle of salt to the water/sugar mixture. Cover and chill in the fridge overnight ready for use the next day.
Next day, add the mixture to your ice-cream maker and follow your manufacturers’ instructions.
Before serving, sprinkle with torn basil leaves and enjoy!
