Toasted Pita Bread with Spinach and Garbanzo Beans - Munch Alert

Toasted Pita Bread with Spinach and Garbanzo Beans

Serves 4

Ingredients:
10oz fresh baby spinach, washed
ΒΌ cup extra virgin olive oil
1 tsp sea salt
Juice of 1 lemon
1 15oz can Garbanzo Beans
4 Wholemeal Pita breads

Instructions:
Heat the olive oil in a large frying pan. Add the garbanzo beans and cook for a few minutes. Add the baby spinach in batches and cook until just wilted. Season with salt. Add the lemon juice and stir.

In the meantime, slightly toast the pita bread and serve immediately with the spinach and garbanzo bean mixture.
