Strawberry Mousse Parfait Pie, Vegan Style

Yields: 1 pie

Granola Crust:
3 cups gluten-free and dairy-free granola
1/2 cup melted coconut oil
2 tablespoons agave

Strawberry Mousse Filling:
8 ounces Strawberry Cream Cheese Style Spread
1/4 cup softened coconut butter
1 cup sliced organic strawberries
12 ounces Dairy-free Strawberry Almond Milk Greek Yogurt
1/2 cup coconut oil, melted (measured before melting)
7 tablespoons agave
2 tablespoons lemon juice
2 tablespoons Dairy-free Original Coconut Creamer
1 tablespoon organic cornstarch
1 tablespoon vanilla extract
1/2 teaspoon salt

Vegan Yogurt Glaze:
3 tablespoons Dairy-free Vanilla Coconut Milk Yogurt
1 teaspoon melted coconut oil
1 teaspoon Dairy-free Original Coconut Creamer

– Granola Crust:
– Preheat oven to 350 degrees Fahrenheit.
– In a 9” spring form pan, cover the bottom with parchment paper.
– Grease sides lightly.
– Using a food processor, process the granola into crumbs.
– Add in the coconut oil and agave.
– Mix again until combined.
– Press dough into spring form pan.
– Bake 10 minutes.
– Chill in fridge.
– Meanwhile, make filling.

Strawberry Mousse Filling:
Using a blender, mix cream cheese, strawberries, and coconut butter until fully blended.
Add in rest of the filling ingredients, blending until smooth.
Pour into previously prepared crust.
Cover and set in refrigerator overnight to set.

Yogurt Glaze:
Mix all ingredients together.
Drizzle over the set pie.
