Green Lentil Loaf

Green Lentil Loaf - Munch Alert

Serves 4 – 6

Ingredients
1 cup green lentils
1 bay leaf
3 cups water
1 tbsp olive oil
1/3 cup onion, minced
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
½ lb sourdough bread
1 tbsp tamari
1 tbsp freshly grated ginger
1 tsp sea salt
2 tbsp Tahini

Instructions
– Preheat oven to 350 degrees Fahrenheit.
– In a large pot, simmer the lentils in water with the bay leaf for about 45 minutes or until tender. Place the mixture into a blender and blend until smooth.
– In the meantime, soak the sourdough bread in water for about 3 minutes. Then squeeze the water from the bread.
– In a large frying pan, heat 1 tbsp olive oil and gently fry the onion, garlic, basil and oregano. Add the sourdough bread to the pan and stir until well combined. Add the lentil puree and cook for a further few minutes. Season with salt and pepper, ginger and tamari. Cook for a further 8 – 10 minutes, then remove from the heat. Stir in the Tahini and pour mixture into a lightly greased loaf pan.
– Bake in the oven for about 30 minutes.
