Festive Corn

2 Tablespoons chopped green onions
1/3 C. chopped green pepper
1/3 C. chopped red pepper
½ C. chopped fresh tomato
1 Tablespoon apple cider vinegar
2 Tablespoons water
1 teaspoon chili powder
1 (10 oz.) package frozen whole kernel corn, thawed
1 teaspoon honey
2 Tablespoons fresh parsley
1 wedge lime


In a large skillet, over medium heat, cook green onions, peppers, and tomatoes in vinegar and water for 5 minutes. Add chili powder and cook briefly. Add corn and honey. Cook for 5 more minutes. Sprinkle with parsley and limejuice. (Serves 4)
