Meaty Mushroom Nachos

Mushroom Meat Ingredients
1 tablespoon olive oil
1 small onion, chopped
1 clove garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
3 portabella mushrooms, chopped
1 tablespoon minced chipotle pepper
salt and pepper

Nacho Ingredients
black beans
shredded cheese
salsa
sautéed veggies of choice
sour cream
cilantro
jalapeno peppers
green onions
tomatoes, chopped

Mushroom Meat Instructions
In a large frying pan, add and heat the oil over a medium-high heat setting. Add the onion and cook until softened, about 3 minutes. Add the garlic, cumin, and paprika. Mix well. Add the mushrooms and the minced chipotle. Cook the mushrooms for about 8 minutes. You want most of the mushroom liquid to evaporate. Remove the mushroom mixture from the heat. Add salt and pepper to taste.

Nacho Instructions
In a large bowl or four small bowls, add the tortilla chips. Pour the meaty mushrooms over the top. Add your other favorite toppings such as black beans, cheese, salsa, etc.
