Quinoa Porridge

Serves about 3-4

1/2 cup quinoa
1 1/2 cup almond milk
1/4 tsp cinnamon
2 tbsp brown sugar
1/2 cup water
1 pinch salt

Over medium heat, heat a saucepan and add the quinoa. Stir in the cinnamon. Cook and stir until the quinoa is toasted, about 3 minutes. Add the almond milk, water, brown sugar and salt. Bring the mixture to a boil, then immediately reduce the heat to low and allow the porridge to cook until thick – about 25 minutes. Add additional water if needed to prevent burning.

Serve immediately with a generous helping of maple syrup and fresh fruit.
