Breakfast Rice Cereal with Dried Fruit
1 ½ cups water
¾ cup skim milk
1/3 cup mixed dried fruit, cut into chunks if too big
1 cup quick-cooking brown rice
Dash ground nutmeg or cinnamon
Maple syrup to taste
Bring the water, with a pinch of salt, to a boil. Then add the brown rice and dried fruit. Cover the saucepan and allow to simmer for about 10 – 15 minutes or until the rice is tender and the liquid absorbed. Pour on the milk and combine well. Add the ground nutmeg/cinnamon, heat through, while constantly stirring.
Drizzle with maple syrup and enjoy this delicious rice cereal for breakfast or brunch.
