Toasted Cashew Seitan
4 tablespoons sesame oil
6 cloves garlic, minced
1 cup assorted vegetables, chopped*
1/4 cup water
1/4 cup miso
1/4 cup rice vinegar
3 tablespoons pickled ginger, minced
2 teaspoons sugar
1 pound of chicken seitan, cubed
2 cups cashews, toasted
1 green onion, sliced (for garnish)
In a frying pan, add 4 tablespoons of sesame oil. Heat the oil and add the garlic. Sauté the garlic for about 30 seconds. To the pan, add the remaining vegetables. Sauté the vegetables until they are almost tender, which will take 3 to 5 minutes.
Add water, vinegar, miso, sugar, ginger, and pepper to the mixture and bring it to a simmer. If your sauce is too thin, dissolve 1 tablespoon of cornstarch in a small amount of water. Add this to the mixture and stir very well. Simmer the mixture for 1 or 2 minutes or until the mixture is thickened.
Now, add the seitan and the cashews to the mixture. Heat until the seitan and cashews are warmed throughout. Spoon the mixture over rice or any grain of your preference. Garnish with sliced green onions. Serve hot.
