Carrot Salad with Lemon and Dill

(Makes 2 Servings) 

1 tbsp lemon juice
1 tbsp extra-virgin olive oil (preferably cold-pressed)
½ small clove garlic, minced
1 cup shredded carrots
1 ½ tbsp fresh dill, chopped
1 tbsp scallion, finely chopped
Salt and pepper

In a salad bowl, whisk olive oil and lemon juice. Add garlic and season well. Add shredded carrots, dill and scallion and toss gently.
