Cinnamon Roll with Caramel Apple Glaze

Yield: 12 rolls

Cinnamon Apple Filling:
4 peeled and chopped Granny Smith apples
1 tablespoons virgin olive oil
1/2 cup brown sugar
1 1/2 tablespoons cinnamon

Cinnamon Roll Dough:
1 cup Creamy Rice Milk or Almond Milk
1/4 cup coconut oil
3 1/2 cups all-purpose flour, plus some for rolling
1/4 cup granulated sugar
1/2 teaspoon salt
2 1/4 teaspoon instant yeast
1 egg

Cinnamon Roll Caramel Glaze:
20 unwrapped caramel cubes
1/4 cup Almond Milk
1 1/4 tablespoons virgin olive oil
1/4 teaspoon sea salt
2 cups powdered sugar

Cinnamon Apple Filling:
In a large frying pan, heat the oil to just hot.
Add diced apples, brown sugar, and cinnamon.
Stirring constantly, cook for five minutes on medium heat.
Remove pan from heat.
Set aside to cool and make the dough.

Cinnamon Roll Dough:
Preheat oven to 400 degrees Fahrenheit.
Heat 1/4 cup coconut oil for 30 seconds in a microwave safe dish.
Get the oil warm, being careful not to let it get hot.
When coconut is warm, add oil and stir to mix well.
Combine flour, sugar, and salt in a separate bowl.
Mix buttermilk, oil, and yeast with a spoon in a large bowl.
Let it rest for 5 minutes.
Add 3 cups of flour mixture and egg to the bowl, knead until mixed well.
Add remaining 1/2 cup of flour if dough is still sticky after all the flour has been kneaded in.
Knead until the dough is soft and no longer sticking to the sides.
Roll dough out into a large rectangle approximately 1/2 inch thick on a lightly floured surface.
Spread apple-filling mixture evenly over the dough.
Tightly roll dough to opposite side, beginning with the long side closest to you.
Pinch the seams together at the end.
Grease a 9×13 inch pan.
Cut rolls into 12 even pieces and place in this pan.
Use a warm damp cloth to cover pan, and place in a dark, warm place to allow dough to rise for about 25 minutes.
Bake at 400 degrees Fahrenheit, once rolls have risen, until slightly browned, about 15 minutes.
Prepare your caramel glaze while rolls are baking.

Cinnamon Roll Caramel Glaze:
In a medium saucepan, Melt caramel, slowly adding Creamy Rice Milk or Almond Milk and virgin olive oil.
Once caramel is totally melted, remove from heat.
Add powdered sugar and sea salt, whisking until smooth.
Remove rolls from oven when done baking.
Cool for 5 minutes.
Top with glaze.
Wait 15 minutes before serving to allow glaze to set.
