Peppers & Polenta With Dairy-free Alfredo Sauce

Servings: 6-8

2 cups cooked polenta
2 tablespoons coconut butter
2 tablespoons flour
1 teaspoon sea salt
1 teaspoon garlic powder
1/4 cup nutritional yeast
1-3 cups Dairy-free Unsweetened Coconut Milk Beverage
1 of each, chopped red and green peppers

Cook polenta according to package directions.
Pour cooked polenta into a 9×12-inch casserole pan or dish.
Mix coconut butter, flour, sea salt, garlic powder and nutritional yeast in a medium sized pot, stirring well.
Stirring constantly, cook for a minute.
Using a whisk, stir in 1 cup coconut milk beverage.
Whisking continuously, bring to a boil.
Whisk in additional milk alternative as needed to get your desired consistency.
Remove from heat.
Pour sauce over polenta.
Top with the chopped peppers.
