Whole Wheat Dairy Free Pancakes

4 to 6 servings

Ingredients

2 cups pastry flour, whole wheat
1/4 cup wheat germ
3 tablespoons flour, soy
2 tablespoons sugar, white
4 teaspoons baking powder
1/2 teaspoon salt
3 eggs
1/4 cup oil, canola
1/4 teaspoon almond extract
2 cups milk, soy

Instructions

Preheat pan or griddle to 350 degrees Fahrenheit.
Combine dry ingredients in a large mixing bowl.
Combine eggs, oil and almond extract in another large mixing bowl.
Whisk until combined.
Add soy milk and stir.
Whisk in wet ingredients until combined well.
Adjust liquid if necessary so that batter is slightly thick.
Use the 1/4 measuring cup to scoop out the amount for the now hot pan or griddle.
Cook until edges look dry and bubbles have subsided.
Flip and cook other side until golden brown, about one minute or so.
Serve warm.
